  • 14.5 ounces Crushed Roasted Tomatoes Traditional crushed tomatoes are an acceptable substitute
  • 15 ounces Corn (canned, drained) Frozen corn can be substituted
For the Topping
  • 2 cups Mexican Shredded Cheese Feel free to use cheddar or pepper jack
  • 1/4 cup Cilantro Can substitute with green onions or omit

Method
 

Step-by-Step Instructions for Cowboy Casserole
  1. Preheat your oven to 180°C (355°F).
  2. In a non-stick skillet, heat over medium-high heat and add the lean ground beef. Cook for 5-6 minutes until fully browned. Drain excess fat.
  3. Add diced onion, minced garlic, and taco seasoning. Cook for 3-4 minutes until onion is translucent.
  4. Stir in crushed roasted tomatoes. Season with salt and pepper. Reduce heat to low and let simmer for 10 minutes.
  5. Mix in canned corn and diced green bell pepper. Stir well to combine.
  6. Grease a 9x13 baking dish and transfer the beef and vegetable mixture to it, spreading evenly.
  7. Arrange crispy tater tots over the beef mixture in diagonal lines.
  8. Sprinkle Mexican shredded cheese evenly over the tater tots.
  9. Place the casserole in the preheated oven and bake for 12 minutes until cheese is bubbly and golden brown.
  10. Remove from oven and garnish with fresh cilantro. Serve and enjoy!
