- In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, and chopped fresh parsley. Add the ground cumin, optional ground coriander, salt, and freshly ground black pepper. Mix until all ingredients are evenly combined.
- Take a handful of the mixture and mold it into small, oval-shaped koftas, roughly the size of a golf ball. Arrange the formed koftas on a tray.
- Preheat your grill to medium-high heat, about 400°F (200°C). Lightly brush the grill grates with olive oil.
- Place the shaped koftas onto the hot grill and cook for about 10 to 12 minutes, turning them every 3-4 minutes.
- While the koftas are grilling, whisk together plain yogurt, freshly squeezed lemon juice, and a pinch of salt until smooth and creamy.
- Once the koftas are finished, transfer them to a serving platter and serve with the garlic yogurt sauce on the side.
