  • 1 medium Zucchini can substitute with yellow squash
  • 1 lb Smoked Kielbasa opt for high-quality kielbasa
For the Cowboy Butter Sauce
  • ½ cup Unsalted Butter margarine can substitute
  • 4 cloves Garlic use fresh minced for best flavor
  • 2 tbsp Dijon Mustard yellow or whole-grain can substitute
  • 1 large Lemon Juice use fresh juice
  • ¼ cup Fresh Parsley basil or cilantro can substitute
  • 1 pinch Cayenne Pepper adjust to taste

Method
 

Step-by-Step Instructions
  1. Boil baby potatoes in salted water for about 10 minutes or until fork-tender. Drain and let cool.
  2. Slice fresh corn into thick rounds and cut zucchini into bite-sized pieces. Chop kielbasa into 1-inch chunks.
  3. In a medium saucepan, melt butter over medium heat, then add garlic, mustard, lemon juice, parsley, cayenne pepper, salt, and pepper. Simmer for 3 to 5 minutes.
  4. Thread potatoes, kielbasa, corn, and zucchini onto skewers, alternating to create a colorful arrangement.
  5. Preheat grill to medium heat (350°F) and oil the grates to prevent sticking.
  6. Place skewers on the grill, brush with Cowboy Butter sauce, and grill for 10 to 15 minutes, turning occasionally.
  7. Remove from grill, drizzle with remaining sauce, and garnish with lemon wedges. Serve hot.
