Chipotle Ketchup
  • 1/2 cup ketchup use your preferred brand
  • 1 tablespoon chopped Chipotle Chile adjust quantity to taste
  • 1 tablespoon adobo sauce use from canned chipotles
  • 1 teaspoon balsamic vinegar substitute with apple cider vinegar if needed
Sandwich
  • 2 slices leftover meatloaf can be any meat or vegetarian
  • 2 slices Italian or White Bread choose your favorite type
  • 1 slice white American cheese swap for cheddar or provolone if desired
  • 1 slice baby Swiss cheese can be replaced with Gruyere
  • 1 tablespoon butter use margarine for dairy-free option
  • to taste pickles optional, choose dill or sweet pickles

Method
 

Preparation
  1. In a small bowl, mix together the ketchup, chopped chipotle chile, adobo sauce, and balsamic vinegar until well combined. Set aside.
  2. Take a slice of bread and lay down one slice of white American cheese. Add slices of meatloaf followed by another slice of cheese and pickles (if using), then top with another slice of bread.
  3. Heat a non-stick skillet over medium heat and melt the butter. Place the sandwich on the skillet, butter the top slice of bread, and cover with foil.
  4. Cook for about 3-4 minutes until the bottom is golden brown, then flip the sandwich, butter the exposed side, and cook for another 3-4 minutes.
  5. Remove from skillet, let cool for a minute, slice in half, and serve with chipotle ketchup.
