- In a small bowl, mix together the ketchup, chopped chipotle chile, adobo sauce, and balsamic vinegar until well combined. Set aside.
- Take a slice of bread and lay down one slice of white American cheese. Add slices of meatloaf followed by another slice of cheese and pickles (if using), then top with another slice of bread.
- Heat a non-stick skillet over medium heat and melt the butter. Place the sandwich on the skillet, butter the top slice of bread, and cover with foil.
- Cook for about 3-4 minutes until the bottom is golden brown, then flip the sandwich, butter the exposed side, and cook for another 3-4 minutes.
- Remove from skillet, let cool for a minute, slice in half, and serve with chipotle ketchup.
