  • 2 tablespoons Lemon Juice Balsamic vinegar can be used instead.

Step-by-Step Instructions
  1. Boil the Pasta: Bring a large pot of salted water to boil. Add pasta and cook according to package instructions for 8-10 minutes. Reserve 1/2 cup pasta water, then drain.
  2. Sauté the Vegetables: In a skillet, heat olive oil over medium heat. Add red onion and cherry tomatoes, sauté for 3-4 minutes. Stir in spinach and cook for 2-3 minutes until wilted.
  3. Combine Pasta and Vegetables: Add drained pasta to the skillet, mixing thoroughly. Pour in reserved pasta water to create a light sauce. Toss gently for 1-2 minutes.
  4. Add Toppings: Remove from heat, add crumbled feta and olives. Season with salt and pepper. Toss gently to combine.
  5. Dress the Pasta: Drizzle lemon juice over the mixture and add fresh herbs. Stir to incorporate all elements.
  6. Serve and Enjoy: Transfer to serving plates, garnishing with extra feta and herbs. Enjoy warm.
