For the Salmon
  • 2 fillets Salmon Fillet Fresh fillets with vibrant pink color
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste
For the Spinach Mixture
  • 2 cups Spinach Thawed and drained if frozen
  • 1 medium Onion Sliced
  • 2 cloves Garlic Minced
  • 1/2 cup Sour Cream Can substitute with Greek yogurt
For the Topping
  • 1 cup Mozzarella Cheese Shredded
  • 2 tbsp Olive Oil For sautéing

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add 1 sliced onion and sauté for about 3-4 minutes until translucent and fragrant.
  2. Stir in 2 minced garlic cloves and cook for 30 seconds.
  3. Add 2 cups of thawed spinach and cook for 2-3 minutes, stirring frequently.
  4. Season with salt and pepper, then mix in 1/2 cup of sour cream.
  5. Preheat oven to 175°C (347°F). Season 2 salmon fillets with salt and pepper.
  6. Sear the salmon in a separate pan over medium-high heat for 2 minutes on each side.
  7. Place the seared salmon fillets skin-side down in a greased baking dish. Spread the creamy spinach mixture on top.
  8. Sprinkle 1 cup of shredded mozzarella cheese over the spinach.
  9. Bake for 15-20 minutes until cheese is melted and golden.
  10. Allow to rest for a couple of minutes before serving.
