- Heat 2 tablespoons of olive oil in a skillet over medium heat. Add 1 sliced onion and sauté for about 3-4 minutes until translucent and fragrant.
- Stir in 2 minced garlic cloves and cook for 30 seconds.
- Add 2 cups of thawed spinach and cook for 2-3 minutes, stirring frequently.
- Season with salt and pepper, then mix in 1/2 cup of sour cream.
- Preheat oven to 175°C (347°F). Season 2 salmon fillets with salt and pepper.
- Sear the salmon in a separate pan over medium-high heat for 2 minutes on each side.
- Place the seared salmon fillets skin-side down in a greased baking dish. Spread the creamy spinach mixture on top.
- Sprinkle 1 cup of shredded mozzarella cheese over the spinach.
- Bake for 15-20 minutes until cheese is melted and golden.
- Allow to rest for a couple of minutes before serving.
