  • 1 cup mayonnaise substitute with Greek yogurt for a healthier option
  • 2 tablespoons granulated sugar can substitute with honey or maple syrup
  • 2 tablespoons apple cider vinegar white vinegar works well too
  • 1 pinch fresh ground black pepper use freshly ground for best aroma
Salad
  • 4 cups broccoli florets cut into bite-sized pieces
  • 6 slices crispy cooked bacon chopped into small pieces
  • ½ cup chopped red onion green onions can be used as a substitute
  • ½ cup sweetened dried cranberries raisins or dried cherries can also work
  • cup sliced almonds substitute with sunflower seeds for a nut-free option

Method
 

Preparation
  1. In a small bowl, whisk together the mayonnaise, sugar, apple cider vinegar, and black pepper. Set aside.
  2. Wash and trim broccoli florets. Optionally blanch in boiling water for 1-2 minutes, then plunge into ice-cold water.
  3. Cook bacon in a skillet until crispy, about 8-10 minutes. Chop into small pieces.
  4. In a large mixing bowl, combine broccoli, bacon, onion, cranberries, and almonds. Toss gently.
  5. Drizzle dressing over salad mixture and toss gently until everything is coated.
  6. Cover and refrigerate for at least 1-2 hours to allow flavors to meld.
  7. Once chilled, toss gently before serving as a side dish.
