- Trim excess fat from the chicken thighs and cut them into 1 to 1.5 inch chunks. Toss with avocado oil, salt, and pepper.
- Preheat the Blackstone griddle to medium-high heat (375-400°F) for about 10 minutes.
- In a small saucepan on the griddle, combine fresh orange juice, soy sauce, and honey. Stir occasionally until the honey dissolves.
- Place the seasoned chicken pieces on the griddle, cooking for about 5-7 minutes until golden brown on the underside.
- Flip the chicken and cook until internal temperature reaches 150-160°F, about another 5-7 minutes.
- Pour half of the orange sauce over the chicken, stirring gently. Simmer for a few minutes and then add remaining sauce.
- On a separate side of the griddle, sauté bell peppers, onions, and orange slices for 3-5 minutes.
- Once chicken reaches 165°F, combine everything and serve immediately over rice, noodles, or vegetables.
