Step-by-Step Instructions
  1. Prepare the chicken by seasoning the thighs with salt and pepper.
  2. In a pot, heat olive oil and sear the chicken thighs until golden brown.
  3. Sauté diced onion, carrot, and celery until softened, then add garlic.
  4. Deglaze the pot with dry white wine, scraping up brown bits.
  5. Combine diced tomatoes, chicken broth, tomato paste, thyme, rosemary, bay leaf, and lemon zest.
  6. Nestle seared chicken thighs back into the pot with the sauce.
  7. Cover the pot and let simmer on low heat for about 1 hour.
  8. Taste the sauce and adjust seasoning with salt and pepper if needed.
  9. Allow the dish to rest for 10-15 minutes before serving.
