- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Combine panko breadcrumbs, grated Parmesan cheese, parsley, thyme, rosemary, garlic powder, onion powder, salt, and pepper in a bowl.
- Cut pockets into each chicken breast carefully.
- Stuff each pocket with Boursin cheese tightly.
- Brush each chicken breast with olive oil, then coat with the breadcrumb mixture.
- Place the coated chicken breasts in the greased baking dish. Drizzle melted butter over the top.
- Bake for 30-35 minutes or until golden-brown and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for about 5 minutes before serving.
