Preparation
  1. Begin by rinsing the boneless chicken thighs under cold water and patting them dry with paper towels.
  2. In a bowl, mix together soy sauce, oyster sauce, garlic powder, salt, and black pepper.
  3. Pour this marinade over the chicken thighs, allowing them to marinate for at least 15 minutes.
  4. Sprinkle cornstarch over each chicken thigh and shake off excess.
  5. In a large skillet, heat oil over medium-low heat and place the chicken skin-side down.
  6. Cook until the skin is golden brown, then flip and ensure internal temperature reaches 165°F.
  7. Remove chicken and drain excess oil, leaving about a tablespoon in the pan.
  8. Add butter to the pan, then stir in minced garlic and cook until fragrant.
  9. Add honey and a splash of soy sauce, simmering until glaze thickens.
  10. Toss fried chicken in the glaze until evenly coated and serve hot, garnished with dried parsley if desired.
