  • 3-4 lbs Organic Chicken skinless
  • 1-2 Tbsps Browning Sauce optional
For the Marinade
  • 2-3 Tbsps Jamaican Green Seasoning or all-purpose seasoning
  • 2-3 Tbsps Jamaican Curry Powder burn before using
  • 1 tsp Sea Salt
  • ½ tsp Smoked Paprika
For the Sauce
  • 4 Tbsps Extra Virgin Olive Oil
  • 2 Tbsps Brown Sugar adjust or omit to taste
  • 14 oz Full-fat Coconut Milk unsweetened, 1 can
  • 1 cup Organic Chicken Stock low-sodium
For the Vegetables
  • 2 Russet Potatoes peeled & cubed
  • 2 Carrots peeled & chopped
  • 1 Bell Pepper chopped
  • 3 Garlic Cloves minced
  • 2 tsps Fresh Ginger minced, or ground ginger
For Extra Heat
  • 1-3 Scotch Bonnet Peppers adjust to taste
  • 1 Tbsp Jamaican Pepper Sauce use favorite hot sauce
Finishing Touches
  • 2 Green Onions chopped
  • 2 Fresh Thyme Sprigs
  • 1 tsp Ground Allspice
  • Sea Salt & Black Pepper to taste

Method
 

Step‑by‑Step Instructions
  1. Marinate the chicken by coating it with browning sauce, Jamaican green seasoning, sea salt, smoked paprika, and Jamaican curry powder. Refrigerate for at least 3 hours.
  2. Brown the chicken in a skillet with olive oil and brown sugar for 3-4 minutes on each side until golden.
  3. Burn the curry powder in the skillet until fragrant, careful not to let it burn.
  4. Make the sauce by adding garlic, ginger, vegetables, coconut milk, stock, and pepper sauce. Bring to a brief boil.
  5. Simmer the chicken in the sauce on low for 20-25 minutes until tender.
  6. Serve with rice or sautéed vegetables, garnishing with green onions or red pepper flakes.
