  • 2 tbsp Soy sauce Adjust according to taste.
  • 1 tbsp Sesame oil Essential for stir-frying.
  • 2 cloves Minced garlic
  • 1 tbsp Rice vinegar Optional; tailor to taste.
  • 1 medium Onion Provides sweetness and texture.
For the Vegetables and Protein
  • 1 cup Vegan ham Optional; substitute with tofu or omit.
  • 1 cup Fresh mushrooms E.g., king oyster; substitute with any variety.
  • to taste Salt Essential for seasoning.
  • to taste Pepper Essential for seasoning.
  • 2 stalks Green onions/scallions For topping.
For the Garnish
  • 1 tbsp Sesame seeds For garnish.
  • 1 tbsp Additional sesame seeds For topping.

Method
 

Step-by-Step Instructions
  1. Prepare the fresh instant udon noodles according to package instructions, boiling them for about 2-3 minutes until tender but chewy. Drain and rinse under cold water.
  2. In a mixing bowl, combine kimchi juice, sugar, soy sauce, sesame seeds, sesame oil, minced garlic, and rice vinegar (if using). Whisk until the sugar is dissolved.
  3. Heat sesame oil in a non-stick pan over medium heat. Add sliced onion and sauté for about 3 minutes until translucent.
  4. Incorporate vegan ham (if using), kimchi, mushrooms, and any additional vegetables. Stir-fry for approximately 4-5 minutes.
  5. Toss the cooked udon noodles into the pan and pour the sauce over them. Gently stir for about 3-4 minutes.
  6. Season with salt and pepper to taste. Serve immediately, topped with green onions and additional sesame seeds.
