- Prepare the fresh instant udon noodles according to package instructions, boiling them for about 2-3 minutes until tender but chewy. Drain and rinse under cold water.
- In a mixing bowl, combine kimchi juice, sugar, soy sauce, sesame seeds, sesame oil, minced garlic, and rice vinegar (if using). Whisk until the sugar is dissolved.
- Heat sesame oil in a non-stick pan over medium heat. Add sliced onion and sauté for about 3 minutes until translucent.
- Incorporate vegan ham (if using), kimchi, mushrooms, and any additional vegetables. Stir-fry for approximately 4-5 minutes.
- Toss the cooked udon noodles into the pan and pour the sauce over them. Gently stir for about 3-4 minutes.
- Season with salt and pepper to taste. Serve immediately, topped with green onions and additional sesame seeds.
