Preparation Steps
- Preheat your oven to 350°F for mozzarella version or 375°F for roasted red pepper version.
- In a large mixing bowl, combine ground beef, bread crumbs, milk, egg, garlic powder, chopped onion, salt, black pepper, and Parmesan cheese. Mix until well incorporated.
- Lay out parchment paper and transfer the meat mixture onto it, flattening into a rectangle about 1/2 inch thick.
- Spread the shredded mozzarella cheese across the meatloaf rectangle, leaving a 1/2-inch border.
- Using the parchment paper for support, roll the meat mixture tightly to form a log and pinch the seams to seal.
- Transfer the rolled meatloaf seam-side down into a greased baking dish.
- Bake for 45-50 minutes until the internal temperature reaches 160°F.
- Allow cooling for a few minutes before slicing.
