Method
 

Preparation Steps
  1. Preheat your oven to 350°F for mozzarella version or 375°F for roasted red pepper version.
  2. In a large mixing bowl, combine ground beef, bread crumbs, milk, egg, garlic powder, chopped onion, salt, black pepper, and Parmesan cheese. Mix until well incorporated.
  3. Lay out parchment paper and transfer the meat mixture onto it, flattening into a rectangle about 1/2 inch thick.
  4. Spread the shredded mozzarella cheese across the meatloaf rectangle, leaving a 1/2-inch border.
  5. Using the parchment paper for support, roll the meat mixture tightly to form a log and pinch the seams to seal.
  6. Transfer the rolled meatloaf seam-side down into a greased baking dish.
  7. Bake for 45-50 minutes until the internal temperature reaches 160°F.
  8. Allow cooling for a few minutes before slicing.
