Step-by-Step Instructions
  1. In a bowl, whisk together sweet chili sauce, soy sauce, honey, lime juice, and ground ginger until well combined.
  2. Halve the chicken breasts and place them in a resealable bag. Pour half of the marinade over the chicken, making sure it's well coated. Refrigerate for at least 30 minutes.
  3. Heat olive oil in a skillet over medium-high heat and sear the marinated chicken breasts for 4–5 minutes on each side until golden brown.
  4. Pour the remaining marinade into the same skillet and bring it to a simmer, cooking for about 3–4 minutes until it thickens.
  5. Transfer the seared chicken and thickened sauce into a pressure cooker. Seal the lid and cook on poultry mode for 10 minutes.
  6. Perform a quick release of pressure once cooking is complete. Ensure the chicken is cooked through.
  7. Transfer the chicken to a serving platter, drizzle over the sauce, and garnish with sliced green onions and lime wedges.
