Step-by-Step Instructions
- In a bowl, whisk together sweet chili sauce, soy sauce, honey, lime juice, and ground ginger until well combined.
- Halve the chicken breasts and place them in a resealable bag. Pour half of the marinade over the chicken, making sure it's well coated. Refrigerate for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat and sear the marinated chicken breasts for 4–5 minutes on each side until golden brown.
- Pour the remaining marinade into the same skillet and bring it to a simmer, cooking for about 3–4 minutes until it thickens.
- Transfer the seared chicken and thickened sauce into a pressure cooker. Seal the lid and cook on poultry mode for 10 minutes.
- Perform a quick release of pressure once cooking is complete. Ensure the chicken is cooked through.
- Transfer the chicken to a serving platter, drizzle over the sauce, and garnish with sliced green onions and lime wedges.

Notes
For extra flavor, marinate the chicken overnight and consider adding vegetables like bell peppers during pressure cooking.
