Method
 

Step-by-Step Instructions
  1. Rehydrate the dried shiitake mushrooms in hot water for about 2 hours. Squeeze out excess water and chop finely.
  2. In a mixing bowl, combine shrimp with sugar, baking soda, and a splash of water. Sit for 15 minutes, then rinse and drain.
  3. Mix ground pork, remaining sugar, cornstarch, Shaoxing wine, sea salt, and white pepper until tacky.
  4. Fold prepared shrimp into the pork mixture with shiitake, neutral oil, oyster sauce, and toasted sesame oil.
  5. Form siu mai by placing a wrapper in your hand, adding filling, and pinching at the top. Garnish with carrot.
  6. Steam dumplings in a lined steamer for about 9 minutes, or until cooked through.
  7. Serve hot with chili oil or garlic sauce for dipping.
