Cooking Steps
- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Sear the beef chuck roast for 4-5 minutes on each side until brown. Transfer to slow cooker.
- Place the seared beef in the slow cooker and add minced garlic, remaining butter, and beef broth. Ensure the beef is coated.
- Wash and cut Yukon Gold potatoes into quarters, and place them on top of the beef in the slow cooker.
- Cover and cook on low for 7-8 hours or high for 4-5 hours until the beef is fork-tender.
- Carefully remove the beef and potatoes from the slow cooker. Plate and spoon garlic butter sauce over them. Garnish with parsley.
