  • 4 tablespoons Butter Kerrygold recommended; plant-based butter can be used for dairy-free.
For the Sauce
  • 2 cups Beef Broth Swanson recommended; use gluten-free broth to keep it suitable.
For Garnish
  • 1 cup Fresh Parsley Optional but recommended for garnish.

Method
 

Cooking Steps
  1. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Sear the beef chuck roast for 4-5 minutes on each side until brown. Transfer to slow cooker.
  2. Place the seared beef in the slow cooker and add minced garlic, remaining butter, and beef broth. Ensure the beef is coated.
  3. Wash and cut Yukon Gold potatoes into quarters, and place them on top of the beef in the slow cooker.
  4. Cover and cook on low for 7-8 hours or high for 4-5 hours until the beef is fork-tender.
  5. Carefully remove the beef and potatoes from the slow cooker. Plate and spoon garlic butter sauce over them. Garnish with parsley.
