  • 2 cups Strawberries hulled and quartered
  • 1 cup Pecans toasted
  • 1 cup Feta Cheese crumbled
For the Dressing
  • 1/2 cup Balsamic Vinegar main acidic element
  • 1/4 cup Extra-Virgin Olive Oil high-quality recommended
  • 2 tablespoons Poppy Seeds
  • 1 tablespoon Honey or maple syrup for plant-based
  • 1 tablespoon Dijon Mustard acts as an emulsifier
  • to taste Kosher Salt
  • to taste Black Pepper

Method
 

  1. Preheat your oven to 350°F (175°C). Spread the pecans evenly on a baking sheet. Bake for 8-10 minutes, keeping an eye on them.
  2. In a medium bowl, combine balsamic vinegar, olive oil, poppy seeds, honey, Dijon mustard, salt, and pepper. Whisk well.
  3. In a large mixing bowl, combine spinach, strawberries, and thinly sliced onion. Toss gently.
  4. Drizzle half of the dressing over the salad and toss to coat.
  5. Top the salad with toasted pecans and crumbled feta, and toss lightly again.
