Step-by-Step Instructions
  1. In a large mixing bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, honey, brown sugar, sesame oil, minced garlic, freshly grated ginger, and red pepper flakes until well combined. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and let marinate in the refrigerator for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  3. Arrange the marinated chicken thighs in a single layer in the baking dish and bake for 25-30 minutes until cooked through.
  4. For the glaze, pour the reserved marinade into a saucepan and bring to a simmer. Mix cornstarch with water and add to the marinade, stirring until thickened.
  5. Brush the thickened glaze over the chicken and broil for 2-3 minutes until caramelized.
  6. Garnish the chicken with chopped green onions and sesame seeds before serving.
