  • 1/4 cup Cilantro Chopped
For the Dressing
  • 1 cup Greek Yogurt For creaminess
  • 1/2 cup Mayonnaise For rich texture
  • 1 each Lime Juice and Zest For brightness
  • 2 cloves Garlic Minced
  • 1 teaspoon Chili Powder Adjust to taste

Method
 

Preparation Steps
  1. Wash and slice cucumbers in half lengthwise, then chop into bite-sized pieces. Dice red onion and red bell pepper, and thinly slice green onions and cilantro. Combine in a large mixing bowl.
  2. Drain sweet corn and add to the bowl with chopped vegetables. Shred the rotisserie chicken and fold into the mixture. Toss gently.
  3. In a separate bowl, whisk together Greek yogurt and mayonnaise until smooth. Add lime juice and zest, minced garlic, chili powder, paprika, and cumin. Season with salt and pepper, and whisk until combined.
  4. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
  5. Cover and chill in the refrigerator for at least 15 to 30 minutes before serving.
  6. Before serving, give a final toss and garnish with additional cilantro or green onions if desired. Serve chilled.
