- Trim any excess fat from the chicken and season generously with salt and black pepper. Place in the slow cooker in a single layer.
- Whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, and optional ground ginger in a medium bowl. Pour over the chicken evenly.
- Add drained pineapple chunks and sliced red bell pepper to the slow cooker. Do not stir.
- Cover and set to cook on low for 5–6 hours or high for 3–4 hours.
- Once cooked, remove chicken and mix cornstarch with water. Stir into the sauce and cook on high for an additional 15 minutes to thicken.
- Return chicken to the slow cooker, allowing it to warm in the thickened sauce for about 5 minutes.
- Serve over cooked rice, garnishing with green onions and sesame seeds.
