Step-by-Step Instructions
  1. Trim any excess fat from the chicken and season generously with salt and black pepper. Place in the slow cooker in a single layer.
  2. Whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, and optional ground ginger in a medium bowl. Pour over the chicken evenly.
  3. Add drained pineapple chunks and sliced red bell pepper to the slow cooker. Do not stir.
  4. Cover and set to cook on low for 5–6 hours or high for 3–4 hours.
  5. Once cooked, remove chicken and mix cornstarch with water. Stir into the sauce and cook on high for an additional 15 minutes to thicken.
  6. Return chicken to the slow cooker, allowing it to warm in the thickened sauce for about 5 minutes.
  7. Serve over cooked rice, garnishing with green onions and sesame seeds.
