For the Chicken Base
  • 2-3 pieces Boneless Chicken Breasts Lean and tender
For the Sweet & Savory Sauce
  • 1 can Pineapple Chunks Fresh preferred; canned acceptable
  • 1/4 cup Soy Sauce Use tamari for gluten-free
  • 1/4 cup Brown Sugar Adjust for sweetness
  • 2 tablespoons Apple Cider Vinegar Can switch with white vinegar
  • 3 cloves Minced Garlic Fresh garlic preferred
  • 1 tablespoon Grated Ginger Fresh is preferable
  • 1/2 teaspoon Red Pepper Flakes Adjust or omit for heat
For Thickening
  • 2 tablespoons Cornstarch Arrowroot powder can substitute
  • 1/4 cup Water To dissolve cornstarch

Method
 

Cooking Instructions
  1. Place boneless chicken breasts at the bottom of the slow cooker, spread evenly.
  2. Layer pineapple chunks over the chicken.
  3. In a bowl, whisk together soy sauce, brown sugar, apple cider vinegar, garlic, ginger, and red pepper flakes.
  4. Pour the sauce over the chicken and pineapple, ensuring it's well-coated.
  5. Cover and cook on low for 4-6 hours until the chicken is tender.
  6. Remove chicken, shred it, and return it to the crockpot.
  7. Mix cornstarch with water, stir into the sauce, and cook on high for 10-15 minutes until thickened.
  8. Return shredded chicken to crockpot, stir to coat in sauce, and heat before serving.
