Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) or grill to medium heat. Prepare a baking sheet with parchment paper.
  2. In a pot, bring water to a boil and add sweet potato cubes. Simmer for 5-7 minutes until slightly tender. Drain and cool.
  3. In a mixing bowl, whisk together brown sugar, maple syrup, olive oil, cinnamon, and cayenne until smooth.
  4. Toss the cooled sweet potato cubes in the glaze to coat.
  5. Wrap glazed sweet potato cubes with bacon on skewers, packing them snugly.
  6. Cook the skewers for 25-30 minutes, flipping halfway, until bacon is crispy and sweet potatoes are tender.
  7. Brush skewers with leftover glaze in the last 5 minutes of cooking for extra shine.
  8. Serve warm, garnished with fresh herbs or sea salt, and enjoy with dipping sauces if desired.
