Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Chop two medium sweet potatoes, one onion, one green pepper, and two cloves of garlic into uniform pieces.
  3. Heat 2 tablespoons of avocado oil in a large saucepan over medium heat.
  4. Sauté the sweet potatoes, onion, and green pepper for about 8-9 minutes until softened. Add minced garlic in the last minute.
  5. Grease a 9×13 inch casserole dish with avocado oil. Spread the vegetable mixture evenly across the bottom.
  6. In the same saucepan, cook 1 pound of turkey sausage over medium heat until browned, about 5-7 minutes. Mix with the veggies in the dish.
  7. Whisk together 8 large eggs, 1 cup of milk, 1 teaspoon of thyme, and season with salt and pepper in a large bowl. Stir in 1 cup of shredded cheese.
  8. Pour the egg mixture over the vegetables and sausage in the casserole dish, gently stirring to combine.
  9. Bake for 40-45 minutes until set and lightly browned. Check for a golden hue.
  10. Allow to cool for 10-15 minutes before slicing. Serve warm.
