Preparation Steps
- In a mixing bowl, whisk together ranch dressing, olive oil, garlic powder, salt, and pepper until smooth.
- Cut the chicken into bite-sized cubes and add to the marinade. Ensure each piece is evenly coated and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat, around 400°F. Soak wooden skewers in water for 30 minutes.
- Thread marinated chicken and diced pickles onto skewers, alternating and leaving space between pieces.
- Grill skewers for 10-12 minutes, turning occasionally until the chicken is golden brown and reaches an internal temperature of 165°F.
- Remove from grill and let rest for a few minutes before serving with extra ranch for dipping.
