Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whisk together freshly grated ginger, minced garlic, soy sauces, coconut milk, brown sugar, lime juice, salt, and pepper until smooth.
  2. Cut chicken into bite-sized chunks and place in the marinade. Toss to coat evenly and refrigerate for at least 30 minutes.
  3. Soak wooden skewers in water for about 30 minutes to prevent burning; thread the chicken onto the skewers.
  4. Preheat the grill to medium-high heat and oil the grates with vegetable oil to prevent sticking.
  5. Grill the skewers for 4-5 minutes on each side until charred and the internal temperature reaches 74°C (165°F).
  6. Remove from grill, squeeze fresh lime juice over skewers, and serve hot, optionally garnished with fresh herbs.
