  • 3 cloves garlic minced
  • 1/4 cup soy sauce or tamari for gluten-free option
  • 2 tablespoons dark soy sauce omit if lighter flavor is desired
  • 1 cup coconut milk
  • 2 tablespoons brown sugar or honey/coconut sugar
  • 1 fresh lime juice from one fresh lime

For the Skewers
  • 1 pound chicken dark meat preferred; firm tofu for vegetarians
  • 8-10 skewers soaked in water for 30 minutes

Method
 

Preparation
  1. In a mixing bowl, whisk together ginger, garlic, soy sauce, dark soy sauce, coconut milk, brown sugar, and lime juice.
  2. Cut chicken into bite-sized pieces and marinate them in the mixture for at least 30 minutes.
  3. Skewer marinated chicken pieces on soaked skewers.
  4. Preheat grill to medium-high heat; oil the grates lightly.
  5. Grill skewers for 4-5 minutes per side until cooked through.
  6. Squeeze fresh lime juice over skewers before serving.
