For the Salad
  • 8 oz Rotini Pasta Cook until al dente
  • 1 cup Salami Sliced, can substitute with mini pepperonis
  • 1 medium English Cucumber Quartered and sliced
  • 1 cup Grape Tomatoes Halved
  • 1 cup Bell Peppers Diced, using two colors
  • ¼ cup Red Onion Finely chopped
  • ½ cup Black Olives Canned, drained and sliced
  • 1 cup Fresh Mozzarella Pearls Can substitute with cubed mozzarella
  • cup Parmesan Cheese Shredded
  • ¼ cup Parsley Chopped
For the Dressing
  • ½ cup Olive Oil Good quality
  • 1 medium Lemon Juice Freshly squeezed
  • 1 tbsp Italian Seasoning
  • 1 tbsp Sugar Just a pinch
  • 2 tbsp Red Wine Vinegar
  • 1 tsp Dijon Mustard
  • to taste Salt & Black Pepper

Method
 

Step-by-Step Instructions
  1. Boil salted water in a large pot, cook rotini pasta until al dente, about 8-10 minutes, drain and rinse under cold water. Set aside.
  2. In a medium bowl, whisk together olive oil, lemon juice, Italian seasoning, sugar, red wine vinegar, Dijon mustard, and salt and pepper until emulsified.
  3. In a large mixing bowl, combine cooled pasta, salami, cucumber, grape tomatoes, bell peppers, red onion, black olives, mozzarella pearls, Parmesan cheese, and parsley.
  4. Pour dressing over the pasta mixture and toss until evenly coated.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving.
