Ingredients
  

For the Salad
  • 1 can Chickpeas Rinsed and drained
  • 1 can Black beans Rinsed and drained
  • 1 can Kidney beans Rinsed and drained
  • 1 cup Fresh basil Finely chopped
  • 3 tablespoons Lemon juice Freshly squeezed preferred
  • 2 tablespoons Olive oil
  • 2 cloves Garlic Minced
  • to taste Salt
  • to taste Pepper
For Serving (Optional)
  • 1 cup Diced Bell Peppers
  • 1 cup Cucumbers Diced
  • 1/2 cup Feta Cheese Crumble over the top, optional

Method
 

Preparation
  1. Rinse the canned beans under cold running water for about 2 minutes, then drain well.
  2. Finely chop the fresh basil leaves and set aside.
  3. In a large mixing bowl, combine rinsed beans, chopped basil, lemon juice, olive oil, garlic, salt, and pepper.
  4. Cover and chill in the refrigerator for at least 1 hour to let the flavors meld.
  5. Before serving, gently stir the salad to re-coat with the dressing.
