- Preheat your oven to 400°F (200°C).
- Grate the zucchini and sprinkle it with salt. Let sit for 10 minutes to draw out moisture.
- Squeeze out the moisture using a clean kitchen towel or fine sieve.
- Mix the drained zucchini with eggs, Parmesan cheese, and half the Mozzarella.
- Grease a 9x13-inch baking dish and press the zucchini mixture evenly into the bottom.
- Bake in the preheated oven for 20 minutes or until set and lightly golden.
- In a skillet, brown the ground beef and chopped onion over medium heat. Drain excess fat.
- Stir in pizza sauce, green bell pepper, mushrooms, oregano, garlic powder, and black pepper. Simmer for about 5 minutes.
- Spoon the beef mixture evenly over the crust.
- Sprinkle remaining Mozzarella and all the Cheddar cheese on top.
- Return to oven and bake for another 20 minutes, until cheese is melted and bubbly.
