Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Grate the zucchini and sprinkle it with salt. Let sit for 10 minutes to draw out moisture.
  3. Squeeze out the moisture using a clean kitchen towel or fine sieve.
  4. Mix the drained zucchini with eggs, Parmesan cheese, and half the Mozzarella.
  5. Grease a 9x13-inch baking dish and press the zucchini mixture evenly into the bottom.
  6. Bake in the preheated oven for 20 minutes or until set and lightly golden.
  7. In a skillet, brown the ground beef and chopped onion over medium heat. Drain excess fat.
  8. Stir in pizza sauce, green bell pepper, mushrooms, oregano, garlic powder, and black pepper. Simmer for about 5 minutes.
  9. Spoon the beef mixture evenly over the crust.
  10. Sprinkle remaining Mozzarella and all the Cheddar cheese on top.
  11. Return to oven and bake for another 20 minutes, until cheese is melted and bubbly.
